Turkey Meatloaf

A light, high-protein turkey meatloaf bound with psyllium instead of breadcrumbs, with grated carrot, leek, shallot, and parsley and a little Dijon mustard. Baked covered, then finished golden — an easy family dinner.

Ingredients

Into the bowl

  • Ground turkey450 g
  • Psyllium husk10 g
  • Egg1
  • Dijon mustard2 tsp (16 g)
  • Shallot1 (30 g)
  • Carrot50 g
  • Leek30 g
  • Flat-leaf parsley1 handful (8 g)
  • Salt & pepperto taste
Method

Mix and shape

Preheat the oven to 160 °C. In a large bowl, combine all the ingredients (coarsely grate the carrot, cut the leek and shallot into thin strips). Work it together with your hands and form a loaf.

Bake covered

Pour a little water into a covered baking dish and set the meatloaf inside. Bake, covered, for about 40 minutes. If you don't have a dish with a lid, use foil.

Finish golden

After 40 minutes, uncover the meatloaf, raise the oven to 195 °C, and bake for about 10 more minutes until golden.

Tip

Serve with boiled or roasted potatoes and a fresh salad.
